The Market is a broad concept. The Niche is a specialization. Complicated? Get a cup of coffee and I'll give you some examples to make it easier ;)
I created some exemple Market > Niche correlations that I believe will help you define your own niche:

Cosmetics > Cruelty free cosmetics. That means they are made by brands that already use the most modern technologies and no longer carry out the old "tests on animals";
Pet Food > Specialized in Organic Food;
Natural and organic products have already conquered our hearts. They represent a powerful source of nutrients for our pets too... My dogs and cat love it!
Cakery > Specialized in gluten-free cake. There's nothing like walking into an establishment knowing that you can eat everything on the menu without worrying about food allergies or anything else. The same goes for establishments that specialize in products that are vegan, lactose-free... the sky is the limit.
You can also segment your Niche in more steps, as in the example below: Education > Extension Courses > Extension Courses for Veterinary Nursing.
TIP
You don't need extremely complex or expensive tools to identify a niche. Using words like “to” and “for” after your main search word, you can identify niches using Google itself.
The image below shows a Google search for the word "toys". Toys for... cats, dogs, baby, hamster, bunny...
The search engine shows suggestions based on what other people are already searching.

How can a well-defined niche help you on Social Media?
If you are interested in better positioning your brand on social media, answer these questions, even if it is only mentally. They will help you create more relevant, interesting and shareable content for your followers.

Do you have an interest and passion for your chosen market niche?
Do you have specific knowledge related to this market niche?
What benefit can you offer people through this knowledge?
What is the size and demand of this market niche? (What problems can you solve?)
Who most needs what you have to offer?
